Ming Tsai’s BLT Bings: Fusing Eastern and Western Flavors

Renowned chef Ming Tsai has graced us in our Good Day kitchen, showcasing an exciting spin on the classic BLT sandwich through his East-West cuisine philosophy. He shares with us a recipe for BLT Bings that combines crispy bacon, fresh lettuce and juicy tomato slices wrapped up in lumpia wrappers.
To make these delicious treats, start by laying down one Lumpia wrapper on a dry surface. Add a small pinch of shredded iceberg lettuce followed by a slice of tomato cut into ⅛ inch thick pieces. Spread some mayonnaise over the tomato and add two broken bacon strips. Next, top with another slice of tomato spread with mayo before adding more lettuce on top.
Wet the edge closest to you using an egg wash made by mixing one cracked egg in a small bowl with 1 tbsp of water. Fold this side over the filling and repeat for the other end, creating a seal. Set aside seam-side down while continuing this process with the remaining fillings and wrappers.
To cook these BLT Bings, heat up some vegetable oil in a cast iron pan on medium-high heat using ¼ cup of it. Once hot enough, place four bings into the skillet to fry until evenly golden brown for approximately two to three minutes per side before transferring them onto paper towel-lined plates.
