Ingredients:
– 1 pound Italian sausage (sweet or spicy, depending on preference)
– 1 package (19 oz) frozen three-cheese tortellini
– 2 cups heavy cream
– 1 cup grated Parmesan cheese
– 2 cups fresh baby spinach
– Salt and pepper, to taste

Instructions:

1. Cook the Italian sausage in a large skillet over medium-high heat until browned and fully cooked, about 10-12 minutes. Remove from skillet and set aside.

2. In the same skillet, bring salted water to a rolling boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

3. Reduce heat to low and add the heavy cream to the skillet. Stir constantly with a wooden spoon until heated through.

4. Add the cooked tortellini and spinach to the skillet with the cream. Stir gently until the spinach is wilted.

5. Add the cooked sausage back into the skillet and stir to combine. Season with salt and pepper to taste.
